Swiss Chard

You have a recipe that asks for Swiss Chard but you have no idea what it is or where to find it.
Swiss chard is a leafy green vegetable and can be found in most grocery stores in the produce department. There are several varieties so if not specified you can choose which one will work the best for your needs.
When selecting your chard look for stalks that are firm and not rubbery. The leaves should be vibrant and not floppy looking.
Rainbow chard has a multi-colored stem with bright green leaves. This variety is milder in flavor than the common chard, so if you don't want need a stronger flavor this is a good choice.
Ruby Red chard is sometimes called rhubarb chard also. It has a bright red stem than veins into green leaves.
Common Chard has a white stem with white veins going into bright green leaves.
When you get the chard home, rinse well and trim the bottom off of each stem. Dry thoroughly and store in the refrigerator until ready for use.
To chop easily place several leaves together and roll up together. Slice in 1/4 to 1/2 inch ribbons. For smaller pieces, slice again a few times in the opposite direction.
