Puff Pastry Prep

When you are working with puff pastry, make sure that you thaw it out properly. It needs to sit at room temperature for at least 20 minutes before you try to unfold. If your house is cool, it may take longer.

When you are done making your creation, make sure that you re-wrap any unused pastry tightly and return it to the freezer.

If your recipe requires you to brush it with egg before baking, make sure that none of the egg dribbles over the side. If it does, it may prevent the dough from raising when you bake it.
