Peppy Popovers

Your family loves eating popovers. Here are some hints for some fun popovers!
Instead of cooking your popovers in individual cups, butter a 10" oven proof skillet or cake pan very well. Pour in the batter and bake for 40 minutes.
Popovers are meant to be served hot from the oven. If you need to store after baking, you can freeze for up to 3 months if stored in a tightly sealed bag. When you are ready to reheat, jut preheat your oven to 400F and bake for 10-15 minutes on a baking sheet.
When you are filling your popover cups for baking, make sure to give the batter a quick stir before each cup. This will keep your batter well mixed.
Once the popovers make it into the oven, try to resist opening the door. The heat released will prevent your popovers from cooking correctly.
If your popovers are too brown, lower the oven rack. This will keep the heat from over cooking the top while the inside is still cooking.
