Leftover Mayonaise

If you are making lunch and you notice that there is just a little mayonnaise left in the jar, but not enough for any recipe or a sandwich.

Pour in a bit of vinegar, add some herbs, close the lid and shake well.

You now have enough salad dressing for a small salad.

LEFTOVER TORTILLIAS

You just had a great mexican style meal, but you heated up too many corn tortillas. You don't have to toss them just because they got a little dry. You can make them up for dessert!

Heat a skillet over medium high heat with about an inch of oil in it.

Cut up your corn tortillas into 8 pieces.

Drop each piece of tortilla into the hot oil and deep fry until just brown and puffy.

Using a pair of tongs, flip and cook the other side. This will only take a minute or so.

Remove from the oil with your tongs and place on paper towels to cool just a bit.

While they are still warm, sprinkle with powdered sugar and serve warm!

LEFTOVER COOKIES

Ok, I bet you are thinking to yourself "there is no such thing as left over cookies!" Ahh, but there are. You just have never thought about it. These are the cookie crumbs and broken cookies that you find in the bottom of the bag.

There is no reason to toss these little treasures! Sprinkle them over a scoop of ice cream or a cup of pudding. Adds variety to great everyday treats!

LEFTOVER GREEN SALAD

After dinner you are cleaning up and putting away any left overs. You notice that there is some salad left over.

The last time that you saved some salad it got all soggy and slimey.

What can you do to to prevent this?

The solution is to simply grab some paper towells.

Before you place your salad in a storage container fold up a piece of paper towell and place in the bottom.

Now place your salad on top of the paper towell and cover tightly.

Refrigerate until you are ready to use.

You can use your leftover salad for fillings in sandwiches or pita's

LEFT OVER EGG WHITE

Some recipes will ask for more egg yolks than whites.

You hate to throw them out, but what do you do with them?

You can place the egg whites into a tightly sealed container and refrigerate for up to 4 days.

You can use the whites for meringues or angel food cake.

If you don't plan on making anything like that soon, put some water on to boil with a teaspoon of vinegar in a large pan.

Drop in the egg whites one at a time and reduce the water to a simmer.

Let the egg white cook until solid white and firm.

Remove the whites from the water with a slotted spoon and let all of the water drain off.

Now cut up the whites and place in a tightly sealed container and refrigerate.

Use your egg whites as a nutritios topping for a salad, baked potato or soup.

LEFTOVER BRUSSEL SPROUTS

Not everyone likes brussel sprouts, but if you are a lover of them you may occasionally find yourself with some leftovers.

Here is a quick and easy idea to use them up.

Cut leftover brussel sprouts into quarters and drop in the same italian dressing container as some beans or by themself.

The next time that you have a salad use as a garnish or serve by itself as a side.

LEFTOVER LIMES/LEMONS

When you are cooking, sometimes you are left with a few scrap pieces of lemon or lime.

You can place these pieces into a freezer bag and place in the freezer for up to 2 months.

The next time that you would like to have a cool drink, pull out your lemon/lime wedge and drop it in for a refreshing treat.

SLOPPY JO NACHO

If you have any left over sloppy joes then you are ready for some quick and easy nachos.

Place some corn chips into a baking dish.

Top with the left over sloppy jo mix and some cheese and salsa. Bake at 350 until cheese melts about 15-20 minutes.

Or you can microwave for 3-5 mintues.

Dump the sloppy jo mix over the nachos and serve hot. They will be gone in no time!

LEFT OVER SPAGHETTI?

If you have made up a large spaghetti dinner, but you have some noodles and sauce left over, simply layer the noodles, sauce and some cheese slices in to a casserole dish.

Cover tightly and place in the freezer. Now the next time that you need a quick dinner, pull from the freezer and place in a preheated oven at 350º.

Bake for 35-40 minutes until bubbly on top.

LEFTOVER CELERY

Save the celery tops cleaned and cut up in a tightly sealed container then use them the next time that you are making soup stock or stuffing. Preferably within a week.

If you think that you will not need them for longer than a week, you can cut them into smaller pieces and dry them in your oven under very low heat for about an hour, then toss them into your next cup of soup for some extra flavor.

LEFTOVER BEETS

If you have some leftover boiled beets, chop them up finely and freeze them until the next time that you make up some hash.

By adding the chopped beets you will turn your regular hash into red flannel hash.

Or you can thaw them out and use them for a splash of color on a garden salad or as a topping for some soup.

LEFTOVER CARROTS

Shred any leftover carrots onto a salad or some cottage/ricotta cheese. The carrots will add a bit of vitamins and crunch.

EASY MOCHA CAKE

If you want to jazz up a regular old chocolate cake, break out the coffee!


Using a regular box of chocolate cake mix, make it up as per the instructions, except replace the water for cold coffee.


If you don’t have any coffee made up, just add a tablespoon of instant coffee to the water for making the cake and mix well.

LEFTOVER BEANS

If you have any leftover beans that have been cooked but not seasoned, place them in a container that has some italian dressing and refrigerate.

After about a week or so spoon out a few onto a salad for a garnish or use as an appetizer by themselves.

GRAHAM CRACKER COOKIES

Usually when you make a cake, you end up with a bit of icing left over.

It is usually not enough to save, but too much to throw away.

Spread the icing between 2 graham crackers and they make great cookies.

To store, simply place in an airtight container and leave in a cool dry place.

LEFTOVER ASPARAGUS & BROCCOLI

If you have a bunch of left over asparagus or broccoli, just cover them with water and boil for 10-15 minutes if they have not already been cooked.

Take the pieces and place them in the blender and puree well.

Strain out any larger pieces that are unprocessed and toss.

Store the puree in the freezer until you are ready to make up a batch of creamy soup.

LEFT OVER COOKED FISH

You are scrounging around the refrigerator and freezer, trying to find something quick to make for dinner.

A couple of nights ago you made some fish, and had quite a bit left over. You pull it out and decide that you can give it some new life by making some fish cakes.

You can use just about any kind of fish for fish cakes.

For 2 servings, simply add about a 1 cup fish to approx 1/2 cup or so of mashed potatoes. Add an egg and a couple of tablespoons of onion.

Heat a large fry pan with a few tablespoons of oil to med-high.

Make 4 patties out of your fish mixture about 1/2 to 3/4 inch thick.

Fry in the oil for 3-5 minutes until completely warmed through and lightly browned on each side .

Once the are fryed up, you can eat them or you can cool them and freeze until you need it for a quick accompanyment to go with some soup for lunch.

RICHER STOCK

You have just had a great dinner of turkey or chicken.

You are preparing the bones in a pot to make some stock.

When you are adding your liquid, go ahead and throw in any left over gravy that you might have from your dinner.

It will add an extra kick to the stock that you are preparing.

RECYCLED VEGETABLES

Since this is the cooking and eating time of year we tend to over do it sometimes.

You have cleaned up after dinner and found that you have just a few spoonfulls of vegeatables left.

Not enough for another serving, but still enough that you hate to throw away.

Place them into a larger tightly sealed freezer proof container and freeze.

Now whenever you finish a meal and find that you have more left over, add to the container.

The next time that you are making soup or stew, simply pull out your collection of vegetables and add them to your creation!

LEFT OVER HAM

So you just got done with your ham dinner and you have some scraps that are left over.

There is not enough for a sandwich, but you hate to throw anything away.

Cut up the left over pieces of ham into small cubes and freeze in a tightly sealed container or bag in the freezer.

Now when you are making up scrambled eggs or macaroni and cheese, throw in a handful for a quick pick me up!
