Artichoke Melts
You are having some friends come over and you want to make up a quick appetizer for them to snack on. This is an easy recipe to make and you can pop it in the oven just before they arrive while you clean up.
6 slices Good Quality Sandwich Bread
14 oz Artichoke hearts; packed in water
3/4 cup Parmesan Cheese ; Grated
1/4 cup Mayonnaise
1 clove Garlic; minced
1 each Sliced Olives; (green or black) for garnish
Preheat oven to 350°F.
Trim the crust off the bread and cut each slice into 4 pieces. (can be square or triangular)
Place the 24 squares that you just made into a medium sized baking pan.
Finely chop the artichoke hearts and place in a small bowl with 1/2 cup parmesan cheese, mayonnaise, and garlic. Mix well.
Place 1 tablespoon of the mixture onto each bread piece.
Sprinkle a bit of remaining cheese over the top and a slice or two of olive.
Bake 25-30 minutes.
The edges of the bread should be slightly brown.
Remove from pan and cool slightly before serving.
