2 Day Herbed Chicken Recipe
This is one of our family favorites. I have even been known to use this rub on Pork Loin!
Yield: 4 to 6 servings

1 baking chicken; whole
1 lemon;fresh, whole
1/4 cup olive oil
10 clove garlic
2 teaspoon fresh basil
2 teaspoon fresh thyme
1 teaspoon salt
1 teaspoon brown sugar
1/8 teaspoon pepper
Day 1: Combine the lemon juice, police oil, garlic, basil, thyme, brown sugar, salt and pepper in a blender or food processor. Blend until smooth. Brush the chicken liberally with mixture (I will usually slip beneath the skin). Put the lemon rind in the cavity.
Put the chicken into a plastic produce bag, tie end and refrigerate.
Day 2: Remove chicken from the bag. Brush juices from the bag over the chicken.
Bake the chicken at 350 to 400 covered for 1 1/2 hours or until temperature at hip joints reaches 165 degrees.
